I pray for this lady and her family right now. I hope that one day soon something will happen to bring them greater awareness of the alchemical, sacred and miraculous nature of eating pure and simple food….God Bless Them!
I would love to whip them up a delicious and nourishing Kitchari – a fantastic bean stew that is not only delicious and nourishing… but EASY, FAST, and CHEAP!!!

Magnificent Kitchari
So many recipes you can find online… Here is a great foundation to work from..
Ingredients
2 TBS ghee
(this is just a fancy word for clarified butter)
1 cup brown basmati rice
1 cup moong dahl
or mung beans
1 onion
2 cloves garlic
1 inch of sliced ginger
2 tsp shredded coconut
1 tsp cinnamon
1 tsp turmeric
½ tsp cumin seeds
ground
¼ tsp cardamon seeds
¼ tsp ground fenugreek
¼ tsp ground black pepper
½ tsp sea salt
3 bay leaves
Optionals: dark greens, carrots, zucchini, sweet potato, asparagus
Directions
1. Soak beans overnight and wash both rice and beans well under cold running water. Set aside.
2. Melt ghee in a medium saucepan over medium-high heat.
3. Add all spices as well as salt to melted ghee. Stir for about 1 minute.
4. Add rice and beans, stirring for about 30 seconds so that they get coated with the ghee-spice mixture.
5. Add water and turn heat up to high, mixing all the ingredients together - Kitchari means mixture!
6. After the water has reached a boil, reduce to a slow simmer .
7. Cook for 30-35 minutes, stirring one or two times during the cooking process.
I like that it is so incredibly flexible … you can zing it up with more ginger, or ground it with a few pieces of kale or spinach… a different dish every time you make it! But so beautiful on the digestive system too! Of course the bean-rice combo is a perfect protein and mung beans are great for detoxing. Because I am not big on curry flavours at this time, I don’t add cumin at all.
Delicious, nutritious, easy, fast, and cheap…. what more could you possibly want!
